“Dinner’s ready!!”😍🍴💪🏼🥘

One of our routine things to do as a family is to sit down and eat a family dinner all together. Kristy and I didn’t realize how special this time was until we moved away to college. Now that we are back home, we cherish these dinners and this time with one another more than anything. 🥹

We all sit down together, TV turned off, phones away, and all of our attention is on one another and the food we are enjoying! We go around the table learning about each other’s days… what went well, what didn’t go too well, we tell funny stories, share our opinions of what’s going on in the world, and listen to what everyone has to say.

Sharing this time together was so important for us growing up. We were able to see into each other’s worlds and what was going on in each of our lives. The space to share…with your closest circle listening❤️. Everyone goes their different ways during the day, but we always knew that dinner time we would come back together to share and enjoy!

More Iceland content!!🇮🇸🌲🌿

After leaving Rauðasandur Beach in the Westfjords, Kristy and I headed over to Látrabjarg to see puffins and amazing views.. & we DEF got that! It was about an hour drive and worth every second.

Along the way you have the most stunning nature views with almost no one around. Kristy and I were looking for whales the whole time😂Once you get to Látrabjarg, it is busy, but there is so much space on the mountain/ cliffs you can break away from the groups of people.

& We got to see puffins!!😍one of the top reasons we wanted to come here was for the puffins & weren’t even sure if we would get to see them with their migration patterns. These birds were SO pretty, they almost looked fake!! The cliffs also made you feel like you were on the edge of the world😍 it was a little chilly, but nothing you couldn’t handle.

We would 11/10 recommend coming here if you find yourself in the Westfjords!

Back for more Iceland pics!!😍🤩🌿

After staying on the Vatnsnes peninsula near Hvamstanngi, Kristy and I drove all the way to our campsite in the Westfjords right next to Rauðasandur! There was a storm the first day and a half so Kristy and I went to a nearby hot spring/ cooling baths, a little sea monster museum, then one morning after, the sun came out and it was INSANE!!

We drove into this campsite in rain and fog, not being able to see much, but knowing there was insane nature all around… then when the sun came out, it was SUCH a great surprise!! It was just myself (Sabrina) and Kristy with a few other campers enjoying this HUGE beach and all the views around us.😍

Vatnsnes Peninsula in Iceland!!🦭🌿🌊

Kristy and I are now back in San Diego, CA and settling in! We will continue to share the end of our travels :)

After exploring in the Snæfellsness Peninsula in Iceland, Kristy and I made our way up to Hvammstangi in the north west. We stayed in the cutest air bnb, in what felt like the middle of no where!! We learned that traditional Icelandic houses have 3 roofs (see pic of air bnb) as the family continued to grow their house did to. It was SUPER windy while we were here, but we just made the best of it.

Our air bnb host told us to go down to the beach and we might see a curious seal… sure enough we did!! He/ she was so cute and felt almost human, staring into our souls & following us as we walked along the shore.

While driving around the peninsula, we also saw some Icelandic horses. This pretty lady came right up to us and was SO friendly🥰we named her Midnight and she even followed us back to our car! We had to walk her back to her pasture and made sure she crossed the road safely (not a busy road).

We also made sure to hit up Hvítserkur, this beautiful rock that locals believe is a troll😜 this had the most amazing view in the background seen in the last picture!

Plant-Based “Egg” Salad Sandwich🤤🥚🥬🍞

WOWW you guys… this is not only quick and easy to make, but packed with protein and perfect on some toast. Shredded tofu is where it’s AT!!

We are all for eating more plant-based where we can cause we enjoy it & also for sustainable/ animal reasons. I hope you enjoy one of our faves!!🤤

Ingredients:

• 1/3 block of tofu, shredded
• 4-5 small dill pickles, minced
• ~1/2 tbsp mustard
• 1 tbsp mayonnaise (or vegan mayo)
• 1 tbsp dill pickle juice
• salt & pepper
optional: a dash of olive oil, fresh dill, minced red onion

Mix all ingredients in a bowl, taste, & more seasoning if needed & there ya have it!!

Top on some toast, on top of a salad, in a wrap, grain bowl, whatever you like!! It takes less than 10 minutes to make!! Perfect for those on the go and who need something filling and nutritious!!

Walenstadt!⛰️🌳😍🇨🇭

We met up with @paulineee._03 yesterday had the nicest afternoon in her hometown, about an hour train ride from Zürich!! Her and Kristy worked at the Flumserberg ski resort 2 years ago right near Walenstadt! Yesterday we enjoyed the lake, played some volleyball and soaked up the sun!!😍 such a pretty village surrounded by the most beautiful mountains!!!

Can you imagine seeing these mountains everyday?!
